In my quest to find ways to make dinner as quickly as possible I came across the Instant Pot (Canadian friends, click this link). Instant? I said. How could it be? Well, I can’t say that it cooks instantly, but it can be quite a bit faster than cooking with a stove. If you haven’t heard of it already, it’s an electric pressure cooker.
You still have to factor in time prepping and time releasing the steam but the actual cooking time is shorter than traditional cooking methods. There are a few different models. I have the 6-quart LUX and the 3-quart DUO. That’s right. I have two. I can cook the protein in the LUX and cook rice or potatoes in the DUO at the same time (I recommend the DUO as it has the yogurt function and the handles serve as a holder for the lid). I love it. Last week I made Easy Pressure Cooker Beef & Broccoli served over rice, and it was delicious. The beef was so tender, and the sauce was a perfect consistency.
